The cherry alone embodies the fragrance of summer: fruity, sweet and sour. Its cultivation was democratized in Europe thanks to Louis XV, who was a fervent fan of this fruit. In the perfume industry, several varieties inspire the creators: Morello cherry and amarena in the lead. But like many other fruits, it is impossible to extract an essential oil from the cherry. To reproduce its scent, perfumers resort to synthetic chemistry<\/a>, by assembling different molecules. Benzaldehyde is frequently used to recreate the subtle almond-like nuances of its pit. The cherry reveals a powerful perfume which acts as a fixative, in middle or in top of a fragrance. Its scent is sweet and tangy.
