La rhubarbe est une plante herbac\u00e9e cultiv\u00e9e dans les r\u00e9gions au climat temp\u00e9r\u00e9. Les p\u00e9doncules de la feuille qui se pr\u00e9sentent sous forme de tige filandreuse, se consomment en cuisine et notamment en p\u00e2tisserie sous forme de tarte ou de confiture. Loin de se cantonner uniquement \u00e0 la cuisine, les parfumeurs l\u2019utilisent pour son odeur \u00e9vocatrice de souvenirs gourmands. Toutefois comme pour de nombreux fruits, il n\u2019est pas possible d\u2019extraire une essence de la rhubarbe. Son parfum est reproduit par l\u2019assemblage de plusieurs essences. Il apporte aux compositions une touche verte et fruit\u00e9e, avec des accents toniques l\u00e9g\u00e8rement acides.
