In practice, it is above all an olfactory facet you can recognise among a thousand.

No need to dig out your textbooks: what matters is that these molecules do occur naturally, notably in citrus zest and in some fruits, but that perfumery mostly uses versions created in the laboratory. That control yields a pure, consistent and perfectly measurable material.

They are named with a letter and a number, from C6 to C12, matching the number of carbon atoms in their chain. And each number carries a different scent, which is where it gets interesting.

What do aldehydes smell like?

Aldehydes smell bright, slightly metallic and a little fatty, often compared to warm linen coming off the iron. They give an impression of radiant cleanliness, almost abstract, resembling no particular flower or fruit.

That is exactly what makes them useful. Where a natural material tells you something recognisable, an aldehyde creates light. Perfumers often say it makes flowers sing: laid over a bouquet, it opens out the contours, gives air and volume, like a spotlight trained on a stage.

Aldehydes are molecules greatly prized by perfumers for their very particular scents.

From C10 to C12: each aldehyde has its own scent

Aldehydes are classified by the number of carbon atoms they hold. His work in organic chemistry would durably influence industrial agriculture as well as modern perfumery.

1903, the first synthesis

The chemist Auguste Darzens manages to reproduce aldehydes. The process remains erratic: neither quantity nor quality are there yet.

1910, industrial production

New technical discoveries make manufacturing reliable. Aldehydes finally become available to perfume creators.

1912, the first bold move

A pioneering perfumer, Robert Bienaime, dares to give them a real place in a floral composition, alongside synthetic molecules evoking lily of the valley. The success opens the way.

1921, the breakthrough

A floral created for a great Parisian house makes aldehydes clearly perceptible for the first time. It is niche perfumery that brings them back into the light, reworked in a more contemporary way.

Where do aldehydes sit in a perfume?

Aldehydes sit mainly in the top and heart notes. Volatile, they reveal themselves in the first seconds and sign the opening of a fragrance. Aldehydes are readily called laboratory flowers, so much was their first role to accompany bouquets.

But their playing field goes well beyond. On a chypre accord they tighten the composition and give it bite, alongside oak moss. On woody notes they bring a clarity that keeps the sillage from turning heavy. And in a fresh eau, they extend the sense of cleanliness long after spraying.

Their other quality is more technical: aldehydes reinforce the hold of the compositions they enter, which explains their lasting presence in the most concentrated formulas, right up to the perfume extract.

Recognising an aldehydic perfume

An aldehydic perfume gives itself away at the opening.
